See this video, instructions are:

Settings. Control Centre. Customise Controls.  + Screen Recording. 

Swipe up. Locate Record Button. Hold down button for audio. It records ambient sound so turn the speaker volume up and don’t breathe :)

Trim as you would normally by scrubbing across the bottom of the video.
